I’m not talking about Snack Pack here. This is so much more than that: Rich and decadent; sweet and creamy; vegan and refined sugar-free. Does it get any better?
This healthy chocolate pudding is incredibly decadent, making it a fantastic alternative to sugar- and dairy-laden alternatives. Plus, it boasts energizing antioxidant-rich cacao, protein-filled hemp seeds and buttery avocados. Avocados are an incredible source of monounsaturated fats the good fat that’s also found in nuts and olive oil, which offers all sorts of health benefits, such as lowering cholesterol, reducing the risk of heart disease and even offering protection against certain cancers like colon cancer and breast cancer. I’d like to serve it in individual Weck glass jars (or vintage tea cups) for dessert at a dinner party.
Vegan Raw Chocolate Pudding
Adapted from Sarah Britton for The Kinfolk Table cookbook
1/4 cup hulled hemp seeds
2 heaping tbsps raw cacao powder
2 tbsps raw organic honey OR organic pure maple syrup
1 ripe avocado
1 large banana, frozen and diced
cold water, as needed
OPTIONAL SPICED VEGAN RAW CHOCOLATE PUDDING: Add 1 pinch sea salt, 1 pinch ground cinnamon, 1 pinch ground cayenne pepper
In a blender, combine the hemp seeds through to the banana (or the spices, if you’re adding). Blend, adding cold water, 1 tablespoon at a time, until you reach the desired smooth and creamy consistency.
