The Wonderful Acai Bowl

Have you ever had an acai bowl? It’s satisfying, energizing and so delicious. Acai berry is a Brazilian superfood that’s crazy rich in antioxidants and essential fatty acids; it also boasts essential vitamins (such as B and K) and minerals (potassium, zinc and iron).

I’ve been on an acai bowl kick lately, especially since I tried one for the first time. This breakfast is an absolute lifesaver on busy mornings, since it takes less than five minutes to make (how amazing is that?). It means that there’s no excuse to enjoy a beautifully healthy and energizing breakfast every day.

Beautiful Acai Bowl
Serves 1

1 package frozen acai purée*
1 banana, divided
1/2 avocado
1/4 – 1/2 cup unsweetened almond milk
1 tbsp hemp seeds
1/4 cup mixed fresh berries (I like blueberries, blackberries and sliced strawberries; depending on what’s seasonal)
2 tbsp granola

Come the acai purée, half of the banana, the avocado and almond milk in a blender and purée until smooth. Note, the mixture should be thick enough to eat with a spoon. Pour the mixture into a bowl. Top with hemp seeds, the other half of the banana (sliced), the berries and the granola.

*Acai can be purchased in frozen packets at your local supermarket or health food store.
