It’s that time of year again. Your nose will know its coming first. As soon as you walk into your local supermarket, the sweet smell of peaches seems to greet you at the door.
Did you guys ever have peaches and cream oatmeal for breakfast as a kid (or maybe you still do)? It’s such a nostalgic taste for me, so I thought I’d recreate it in a much healthier way (and minus the cream).
Truthfully, this could be the best glass of goodness yet. I may be going in for seconds. Just saying.
2 peaches, peeled and cored (when peaches aren’t in season, substitute for 1 cup frozen peaches, defrost)
1 cup nut milk (I used almond)
2 tbsp rolled oats (NOT instant; available gluten free, as well)
1 vanilla bean, seeds scraped out (use the seeds) OR 1/2 tsp pure vanilla extract
1 tbsp chia seed or flaxseed (for good measure)
