Superfood Drink Recipe

So, Saturday started with this glass of superfood (recipe follows). Then it turned into an hour long bike ride. Followed by a mad session of cooking, including this granola, a basil and spinach pesto (recipe follows), Greek yogurt-covered frozen strawberries and this tofu and sesame noodle salad (a hit at Sunday’s book club). The cooking session, turned into a reading session (finishing book for said book club), which, obviously, became a nap. My point is that all this productivity (okay, ignore the napping part) wouldn’t have been possible without my glass of superfood. Its funny how something so small can make big changes. And that’s really the whole point of this glass of goodness thing I’m doing here — making small changes for the better!

a glass of superfood
1/2 cup frozen chopped kale
1/2 cup fresh blueberries
1 cup unsweetened pomegranate juice
1/4 cup ice
1 tbsp hemp seeds
1 tbsp chia seeds

basil & spinach pesto
1 handful blanched spinach (blanch, then squeeze out excess water)
1 handful fresh basil
3 cloves garlic
1/4 – 1/2 cup extra virgin olive oil
1 handful pine nuts or walnuts
1/4 cup fresh grated parmessan cheese
1 pinch salt

combine all ingredients in food processor; pulse.
