Quinoa, Apple and Kale Salad

Some days I struggle with what to make for lunch and some days it comes so easy. And when I say easy lunch idea, I really mean it. I made this salad before work one day and didn’t even wake up any earlier than usual. There’s so much goodness packed into one bowl and it’s really filling, too.

1 cup quinoa, uncooked and rinsed
1 apple, diced (toss with a squeeze of lemon juice to prevent from browning)
1/2 cup chopped kale
1 green onion, diced
optional toppings: walnuts, sunflower seeds, dried cranberries or raisins, smoked cheddar cheese
2 tablespoons red wine vinaigrette (recipe to follow)

red wine vinaigrette (this makes more than you need for just the quinoa salad, but it’s really tasty with a garden salad)
1 tsp dijon mustard
1 tsp pure maple syrup (so good, I promise)
1/4 cup red wine vinegar
1/2 cup extra virgin olive oil
sea salt and freshly ground pepper to taste

1. Cook the rinsed quinoa in 2 cups of boiling water on medium-low. (With the lid on, just like you’d steam rice. Watch to make sure it doesn’t boil over!)
2. Once cooked, let the quinoa cool.
3. Add the apple through to the vinaigrette.
4. Refrigerate.
