Hearty Oatmeal Recipe

It all happened on a Sunday, like so many of my ambitious schemes do. The following week was likely going to be a doozy, and there were groceries to be shopped for, laundry to be folded, olympics to be watched and oatmeal to be baked. That’s right baked oatmeal. Simple, hearty and healthful, this make-ahead breakfast (simply refrigerate or freeze) is incredibly delicious when reheated and enjoyed with a scoop of plain organic yogurt. Since Im all about easy-going, stress-free morning routines, including eating simple and healthy breakfasts, baked oatmeal will definitely be kept in the rotation.

The baked oatmeal is not only tasty and substantial, but it keeps me energized all day long, as well as kick-starting my metabolism and keeping cravings in check.

Baked Oatmeal

Ingredients
1 1/2 tablespoons coconut oil, melted and cooled slightly, plus more for coating baking dish
2 cups old-fashioned rolled oats (gluten-free, if youre sensitive to wheat)
1/2 cup walnuts or almonds, toasted and chopped
1/3 cup coconut sugar1 teaspoon aluminum-free baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon fine-grain sea salt
2 cups non-dairy milk (I used brown rice milk, but almond milk would be a delicious alternative)
1 large egg
2 teaspoons pure vanilla extract
2 ripe bananas, cut into 1/2-inch slices
1 1/2 blueberries, raspberries or mixed berries
Maple syrup, for drizzling (optional)

Directions
Preheat oven to 375 degrees. Lightly oil (with coconut oil) an 8-inch square baking dish.

Combine the oats, half the nuts, sugar, baking powder, cinnamon, and salt in a bowl. In another bowl, whisk the milk, egg, half the coconut oil, and the vanilla.

Arrange bananas in a single layer on the bottom of the coated baking dish. Sprinkle with two-thirds of the berries, then cover with the oat mixture. Slowly drizzle milk mixture over the oats. Gently tap dish on a work surface to distribute liquid.

Scatter remaining berries and nuts across the top.

Bake for 35 to 40 minutes, until the top is nicely golden and the oat mixture has set. Let cool slightly. Drizzle maple syrup.
