Hello friends. Here’s what I had for dinner last night. You see, I teach yoga on Wednesday evenings and I usually don’t like to have anything heavy to eat before class. This fresh salad most definitely hit the spot.
1 fresh-picked tomato
1 farmers’ market peach
1 fresh-picked basil leaf, torn
Fresh Buffalo mozzarella (as much, or as little, as you’d like)
1 tablespoon extra-virgin olive oil
1 teaspoon balsamic vinegar
salt & pepper to taste
