Chia Seed Pudding Recipe

I wouldn’t say this chia seed pudding is for everyone. Heck, I haven’t even decided if it’s for me yet! I mean, the texture. Listen, it’s pretty slimy. Get past the texture though and this recipe tastes pretty great, not to mention the crazy health benefits of chia seeds and raspberries. Read about them HERE. I like to eat this an hour and a half to two hours before a big workout, but not all the time because for the same reasons that they’re so good for you, chia seeds can make you feel bloated.

1/4 cup chia seeds
1/2 cup almond milk
1 tsp pure vanilla extract (or use unsweetened vanilla almond milk)
1 tbsp pure maple syrup
1/4 cup frozen organic raspberries
OPTIONAL CHOCOLATE RASPBERRY PUDDING: 1 tbsp raw cacao powder

Combine the ingredients in a glass jar with a lid. Close the lid tightly and give the jar a shake. Refrigerate overnight. The chia seeds will soak up the almond milk and create a gelatinous-type pudding.
