Blueberry, Pomegranate and Carrot

Merry Christmas and Happy Holidays! I hope you’ve had a wonderful month. And thank you so much for reading a glass of goodness. I wanted to share my latest smoothie with you. This one was much needed after all the heavy foods, sweets and wine consumed over the holiday. It feels so good to get back to light, delicious and satisfying breakfasts. This recipe includes pomegranate seeds (one of my favourite winter fruits), frozen blueberries and carrot juice for an extra kick of vitamin C. I’ve done well (knock on wood) at warding off the flu so far and I hope it stays that way. In the meantime, I’m drinking a ton of water and tea, as well as getting a lot of vitamin C into my diet.

1/4 cup pomegranate seeds (see how to deseed below)
1/4 cup frozen blueberries
1 ripe banana
1 cup 100% carrot juice
1 tbsp chia seeds

I’d also like to share an easy lunch idea with you. When it comes to lunch I like to keep things simple and light. Fresh salads are a favorite go-to meal and an easy way to fit in lots of fresh produce, protein and high quality fats into my day. Plus, it gives me a ton of energy for an afternoon workout, meeting or just working at my desk! There are endless ways to mix up your salad, ensuring you don’t get bored of the same old thing. Here’s one of my favourite combos:

– baby spinach
– organic heirloom tomatoes
– avocado
– walnuts
– goat cheese or chevre
– fresh, crusty bread (this one was homemade!)
– a simple dressing of extra virgin olive oil and balsamic vinegar
